Halloumi Couscous Bowls

This bowl was sort of an in-the-moment creation inspired by Jack’s Wife Freda’s Chicken Kabob bowl! So yummy, healthy and filling.

INGREDIENTS—

  • 1 pack halloumi

  • 1 box of plain or Garlic and Herb couscous

  • arugula

  • 1 small cucumber or zucchini

  • 1 small tomato

  • 1/2 red or orange bell pepper

  • capers

  • 1/4 cup red wine vinegar

  • 1/2 tsp honey

  • 2-3 tbsp olive oil

  • 1 clove garlic

  • salt

  • pepper

  • oregano


DIRECTIONS—

  1. Chop up tomato and bell pepper into small bite sized pieces. If you are using cucumber, chop that up as well. If you are using zucchini, cut up into strips and grill with a little olive oil and salt until golden. Remove from pan and chop and add into bowl with tomato and bell pepper. Add some capers to the veggies for a salty bite.

  2. To a small jar with a lid, add red wine vinegar, honey, olive oil, garlic, salt, pepper and oregano to taste. Shake up to mix and emulsify.

  3. Drizzle veggies with some of this dressing, mix and set aside.

  4. Prepare couscous according to package instructions.

  5. Slice up halloumi and grill with olive oil on pan over medium heat until golden brown on both sides.

  6. To serve - add couscous to shallow bowl, add a handful of washed arugula, mixed veggie salad, grilled halloumi and your favorite sauce. Mine is the green jalapeno sauce from trader joes. The Garlic Toom sauce you can find at Whole Foods is really good with this too!
