Dad’s Steak Fried Rice
Dad’s always have a unique flavor palette, mixing random ingredients together in the kitchen. Sometimes it comes out a bit strange and other times it tastes like the best steak fried rice you’ve ever had! He showed me how to make it so here is the recipe because I think you will be addicted to it too. (It’s currently one of Jacques favorite dishes I make)

INGREDIENTS:
For the Steak—
1 piece of steak (about 12 oz)
1/4 tsp baking soda (to tenderize)
salt & pepper
olive oil
For the Rice—
4 cups cooked jasmine rice
4 cloves garlic
3-4 green onion stems
4 eggs
garlic powder
Golden Mountain Seasoning Soy Sauce ( HERE)
black pepper
avocado oil
frozen corn
1 tbsp butter
For the Fish Sauce Vinaigrette—
1/4 cup lemon juice
1/2 cup sugar
1/4 cup water
1/4 cup fish sauce (I like this brand HERE, if you can’t find that one THIS one is good too)
3 cloves fresh minced garlic, 2-4 fresh minced Thai chili’s
DIRECTIONS:
For the Fish Sauce Vinaigrette—
To a jar, add in all ingredients and mix until the sugar is dissolved. Set aside.
For the Fried Rice—
Cook rice according to package instructions. You can cook it a day ahead as well.
Slice steak into bite sized strips or cubes. Season with 1/4 teaspoon baking soda, salt, pepper and a drizzle of olive oil. Mix to combine and set aside.
(You can also cook the steak on the pan as you would cook an entire steak (Jacques prefers it this way). If you do this, skip the above step and just season the whole steak heavily with kosher salt and cook on the pan with some ghee and avocado oil about 3-4 minutes on each side until 130 degrees F. Let it rest and cube.)
Prepare your aromatics - mince garlic, slice green onion and separate the whites from the greens. Set aside.
To a small bowl, crack 4 eggs and sprinkle with garlic powder and a squirt or two of the Golden Mountain Seasoning Sauce. Whisk to combine and set aside.
(If you cooked the steak already, skip this step) —To a large skillet over medium heat, add avocado oil. Once sizzling, add in beef and spread out evenly. Do not touch for about 2 minutes so it gets a nice golden crust. Give it a toss and allow to cook for 30 seconds to a minute.
Push steak aside and add in minced garlic and the whites of the green onion. Saute until fragrant and slightly golden. Mix it into the beef.
Add in whisked eggs and scramble until almost cooked.
Add in your cooked rice and mix.
Season with 4 tbsp of the Fish Sauce Vinaigrette to start, and 1 tbsp of the Golden Mountain Seasoning Sauce. Mix to combine.
Add in frozen corn, you can add in as little or as much as you want! Mix and taste/adjust to seasonings. I usually add some more of the vinaigrette and seasoning sauce if it doesn’t taste as flavorful as you like it.
Finish off with fresh black pepper and sprinkle the remaining of the green onions. Add 1 tbsp of butter, mix and enjoy!
