Versatile Cilantro Chicken Thighs

I created this recipe on a whim one day, mixing together a few ingredients I had in my fridge and pantry and voila - the best chicken thighs ever! It’s super versatile in my opinion, I have it in wraps, chipotle inspired bowls, or as the main protein with sides for dinner…the options are endless.

INGREDIENTS—

  • 1 pack boneless skinless chicken thighs

  • 1 tbsp olive oil

  • 2 tbsp Trader Joe’s Jalapeno Sauce (in the non-refrigerated sauce aisle, in a glass bottle and sauce is light green)

  • 1 tsp garlic powder

  • 1 tsp mexican seasoning

  • 1/2 tsp chilli powder

  • 1/2 tsp oregano

  • salt to taste

  • 2 tbsp fresh chopped cilantro (optional)

DIRECTIONS—

  1. Place chicken thighs in a mixing bowl or gallon ziploc bag

  2. To a small bowl, mix the rest of the ingredients together.

  3. Pour sauce over chicken thighs and mix to evenly coat each chicken thigh. Let it marinate for at least 30 minutes or overnight.

  4. To a large skillet on medium high heat, add a tbsp of olive oil. Once sizzling, add in chicken thighs making sure every piece is touching the bottom of the pan. Let it sear for 2 minutes and flip to the other side. Let it sear for another 2 minutes until golden brown. Turn heat down to medium low and continue to cook until chicken is cooked through.

  5. Remove chicken from pan and it’s ready to be served up anyway you like!

    *I love mine in a flour tortilla, with romaine, sliced tomatoes, sliced red onion, avocado, drizzled with kewpie mayo and a little ranch!
