Mom’s Rice Porridge with Ground Pork

This is one of my favorite comfort meals ever. Rice cooked until it’s completely broken down, porridge consistency. It’s packed with flavor, has fresh herbs, a little tangy with the squeeze of lime and savory - it truly is a hug in a bowl. Make this when you’re sick, hungover, don’t know what to eat or feeling sad. It’s my ULTIMATE comfort meal that I crave over and over again.

INGREDIENTS:

For the Pork Mixture:

  • 1/2 lb ground pork

  • 2 garlic cloves, minced

  • 1/2 tsp sugar

  • 1 tsp fish sauce

  • a few twists of black pepper

  • tiny pinch of salt


For the Rice Porridge:

  • 1/2 cup rice; rinsed under cold water until water runs clear

  • 10 cups filtered water

  • 2 tsp chicken bouillon (I use the Better than Bouillon Chicken Soup Base)

  • 1/4 tsp sugar

  • 1 tbsp fish sauce


For the Toppings -

  • sliced green onions

  • cilantro, rough chop

  • ginger; julienned into thin matchsticks

  • lime

  • white or black pepper

  • Huy Fong Chilli Garlic Sauce (can be found at asian grocery store)

DIRECTIONS:

  1. To a medium sized bowl, add your ground pork, minced garlic, fish sauce, sugar, salt and pepper. Give it a mix with gloves until well combined. Cover with plastic wrap and put in refrigerator.

  2. Rinse 1/2 cup jasmine rice in a colander until water runs clear. Place in a soup pot and fill with 10 cups filtered water and 2 tsp chicken bouillon.

  3. Bring to a boil and reduce to simmer. Let it cook uncovered for 40 minutes.

  4. Remove ground pork mixture from fridge and start adding ~1/2 tsp pieces of raw pork into the rice porridge, mixing it around to break it up. Repeat until there’s no more pork left.

  5. Give it a good mix again and continue to cook the porridge for another 15 minutes until its the consistency in video. It should almost be like oatmeal but a little more loose. (You can always add more hot water to the porridge if it’s too thick)

  6. Once pork is cooked through and porridge is the consistency to your liking, turn off heat and add 1/4 tsp sugar and 1 tbsp fish sauce. Mix.

  7. To serve, spoon rice porridge into a bowl, top with fresh cilantro, ginger, green onion, lime, chili garlic sauce, white or black pepper and a teeny tiny drizzle of fish sauce. Enjoy!
