Crispy Beef Tacos

I am not ashamed that I can say these sort of taste like the gourmet version of the $1 Jack in the Box Crispy Beef Tacos I used to eat back in the day. They were addictingly good, probably deep fried, oily and crispy but oh so delicious.

I used Baked by Melissa’s Magic Meat Sauce and changed it up a bit to use as taco filling and it’s SO GOOD. These tacos are also oven-baked so they are a bit healthier as well.

INGREDIENTS:

  • 1 pound ground beef

  • 1 small yellow onion

  • 4 cloves garlic

  • 1/2 cup water for blending; 1/3 cup water for meat sauce

  • Siete Taco Seasoning or any taco seasoning you like

  • corn tortillas

  • Mexican blend cheese

  • shredded romaine

  • fresh diced tomatoes

  • sour cream

DIRECTIONS:

  1. Cut the onion into quarters, peel garlic cloves and place into blender.

  2. To the blender, add 1/2 cup water and blend until smooth.

  3. To a skillet, heat on medium high and add avocado oil. Once heated, add ground beef and mix around to brown the meat.

  4. Once the meat gets some color, add in the blended onion/garlic mixture. Sauté it around to meld the flavors together.

  5. Add in the Siete taco seasoning mix along with 1/3 cup water (or how much ever water your seasoning packet asks for). Mix until combined and partially cover with lid. Turn heat to low and allow it to simmer for 30 minutes.

  6. Preheat oven to 425° F.

  7. Brush or spray olive oil on both sides of the corn tortilla and spread it out on a lined baking tray.

  8. Layer cheese all over the tortilla (this is going to act as your “glue” for when you fold it over), then spoon taco meat on top.

  9. Stick the tacos into the oven for 1 minute so the tortilla gets warmed up and pliable. By warming up the tortillas for a minute in the oven, it allows you to fold the tortilla over without it cracking/breaking.

  10. Remove the tortillas from the oven and gently fold the tortillas over to create your taco. Press it down gently to make sure it sticks.

  11. Put the tacos back in the oven for about 15 minutes until the cheese and tacos are golden.

  12. Remove from oven and carefully open it apart so you can top it off with shredded romaine, tomatoes and sour cream. Enjoy with your favorite salsa and hot sauce!
