Chimichurri Air-Fried Wings
If I were to fry chicken wings in my apt in NYC, it would be an absolute mess. Air-fried wings tastes just as good, better for you and so much easier!

INGREDIENTS:
For the Wings—
chicken wings
garlic powder
onion powder
paprika
cornstarch
Freshly grated parmesan
Avocado oil spray
For the Chimichurri—
1/2 cup cilantro; finely chopped
1/2 cup parsely; finely chopped
1 fresno chilli; finely diced
4 cloves garlic; minced
3 tbsp red wine vinegar
~ 1 cup olive oil
1/2 tsp dried oregano
Sugar
Salt and pepper to taste
DIRECTIONS:
Remove chicken wings from tray and thoroughly pat dry. Place in a large mixing bowl and set aside.
Chop cilantro, parsley, fresno chili, garlic and add to a medium sized bowl.
Season with 1/2 tsp oregano, a pinch of sugar, salt and pepper to taste.
Add 1 cup of olive oil to start until the herbs are covered and fully submerged. Mix thoroughly and set aside.
To your bowl of chicken wings, drizzle with olive oil and mix.
Then, season with your heart the following spices - garlic powder, onion powder, paprika and salt. Mix.
Sprinkle about 4-5 tbsp cornstarch over the chicken wings and mix until all pieces are coated. Add more cornstarch if needed.
Preheat air fryer to 400°F. Spray the bottom of the basket with avocado oil and place as many chicken wings in as you can fit. It can be tight!
Fry for 10 minutes. After 10 minutes, flip, spray with more avocado oil and fry for an additional 8 minutes.
Remove chicken wings and place into a shallow bowl and drizzle chimichurri sauce over top, mix and sprinkle grated parmesan over top!
