Broccoli Rabe + Hot Italian Sausage Pasta

INGREDIENTS—

  • 1 box Orecchiette pasta

  • 2 bunches broccoli rabe (not to be mistaken with brocollini)

  • 1lb hot italian sausage (casings removed)

  • 6-8 cloves garlic; roughly minced

  • freshly grated parmesan cheese

  • Calabrian chilli paste (optional)

  • salt

  • reserved pasta water

DIRECTIONS—

  1. Bring a large pot of water to a boil. Salt your water. This is where the salt is going to come from for the pasta!

  2. Wash and chop broccoli rabe into bite sized pieces (about 1”).

  3. Once water is boiling, quickly cook your broccoli rabe for 1-2 minutes until tender. Remove from water and set aside.

  4. Bring water back to a boil and cook pasta according to package instructions.

  5. In the meantime, chop your garlic, and remove sausage from casing and break apart with your hands to crumble.

  6. Once pasta is done cooking, reserve around 1.2 cups of pasta water and set aside. Drain pasta.

  7. Return pot to stove and heat over medium high heat, add about 2 tbsp olive oil. Once hot, add in sausage and cook until browned.

  8. Add in minced garlic, about 1 tbsp of Calabrian chilli and sauté for about 20 seconds. Add in broccoli rabe. Mix to combine.

  9. Add in pasta, and ladle in reserved pasta water (1/4 cup at a time) along with generous amount of freshly grated parmesan. Just eyeball, mix and add more pasta water/parm until you get a nice sauce. *The salt/flavor will come from the salty pasta water, the sausage and the parmesan so taste and see if you need to add more salt.

  10. Serve with fresh cracked pepper and fresh parm if desired!
